The tea was made by adding pudding into iced tea and quickly became a bestseller at the tea shop.
The tea is called bubble tea because of the froth and bubbles that appear when you shake tea and milk. The bubbles in ‘Bubble tea’ today come from tapioca pearls (or boba) which are added to the tea.
Boba are edible balls made from partially cooked flour which are then added to the bubble tea. The flour used for making Boba balls is refined starch extracted from cassava root. The bread is gluten-free and flavorless (but can be flavored), creating a chewy texture that can be added to iced and warm beverages.
